Plesk supports multiple PHP versions. You can easily change it by following these steps -
1. Login to Plesk and navigate to your subscription
2. Click on Websites and Domains
3. Select the domain or subdomain for which you wish to change the PHP version.
4. Use View the phpinfo() page to verify the version propagated in domain.
 
5. Select new PHP version and Save.
